hot recognition!
...in Craig LeBan's online chat:  Tuesday September 21, 2010--
2:27  Craig: "Everytime I visit E. Passyunk, I'm always amazed by how vibrant
this old South Philly corridor is becoming again. Chhaya is a nice addition. ...
notable, though, was the coffee Beuria prepared - Chhaya is the only cafe
outside of Ray's in Chinatown that prepares coffee to order using the siphon
method, an elaborate and exacting process involving bunson burners,
meat thermometers and vacuum action. Wow - the Honduran beans from
local roaster, Joe, was one of the richest cups I've tasted in town, with full
frontal flavor but very little bitterness or sourness.. At $6 a cup, it better be good
- and it was."

My addition; Joe:
A pleasant comfortable space, knowledgeable owner and trained staff, freshest
ingredients--worth a trip from your routine.  An absolute joy.
